Tarragon: A small shrub with leaves widely used in French cuisine, tarragon is a distinctive yet subtly flavored herb well suited for use in fish and chicken dishes.Blooms in late summer and fall, providing food for pollinators well after most other flowers have withered. Prune plants regularly to keep the shrub compact and for kitchen use, and don't allow tarragon to flower early, as it will disrupt harvesting. Transplant outdoors when all danger of frost has passed, or transfer to a larger pot and grow indoors. Tarragon does, however, have an extensive root system, and will need ample room to grow, or regular transplanting into larger pots.
